Why Behind the Thinking #
The operator who reads their operation well has a blind spot built into the discipline — they are reading themselves against themselves. But the Guest is not comparing the operation to itself; the Guest is comparing it to every alternative considered before walking through the door. An operation performing well in absolute terms may be performing at parity in relative terms if the category has caught up to its standard.
