Why Behind the Thinking #
Operators who price from plate cost alone are structurally guaranteed to underprice, because plate cost is only one line in a much larger cost stack — labor, rent, utilities, insurance, marketing, equipment, maintenance, and licensing all have to be recovered before profit even enters the calculation. Naming this stack as [X Factor] forces pricing decisions to route through the full burden rather than the visible ingredient cost.
